Cook crab cakes quickly in skillet, then bake. Serve with cilantro-sour cream sauce for easy dinner party prep.
Ingredients:
  • 2 large eggs, beaten
  • 0.25 cup fresh lemon juice
  • 0.25 cup mayonnaise
  • 0.25 cup minced red bell pepper
  • 0.25 cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 pinch cayenne pepper
  • freshly ground black pepper to taste
  • 1 pound fresh crabmeat, well picked over
  • 2 cups dry bread crumbs, divided
  • Sauce:
  • 1.3333333730698 cups sour cream, or more to taste
  • 0.66666668653488 cup mayonnaise
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 teaspoons finely chopped fresh cilantro
  • salt and freshly ground black pepper to taste
  • 0.25 cup corn oil for frying
Instructions:
  • Combine the eggs, lemon juice, mayonnaise, bell pepper, onion, cilantro, salt, cayenne pepper, black pepper in a mixing bowl. Mix thoroughly, then gently fold in the crabmeat and half of the bread crumbs.
  • Shape the crabmeat mixture into 8 patties. Coat them evenly on both sides with the remaining bread crumbs. Transfer the patties onto waxed paper and chill in the freezer for 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) while you get started.
  • Combine sour cream, mayonnaise, diced bell pepper, minced garlic, freshly squeezed lemon juice, chopped cilantro, and a pinch of cayenne pepper in a bowl. Season generously with salt and black pepper.
  • In a skillet over medium heat, heat half of the oil. Gently place patties in the hot oil in batches. Fry until golden brown, approximately 30 seconds per side. Transfer to a plate lined with paper towels to absorb excess oil. Repeat with the remaining patties, adding more oil as necessary.
  • Place the patties on a baking sheet and bake in the preheated oven for 10 minutes until the internal temperature reaches 165 degrees F (74 degrees C).
  • Drizzle sauce over patties and serve.
