Succulent crab fried rice with fragrant onion, garlic, egg, and cilantro, topped with refreshing cucumber and lime slices - a simple and scrumptious weeknight delight.
Ingredients:
  • 1.3333330154419 cups water
  • 0.66666668653488 cup uncooked long grain white rice
  • 3 tablespoons vegetable oil
  • 2 medium onions, cut into wedges
  • 3 cloves garlic, chopped
  • 2 teaspoons salt
  • 0.5 tablespoon white sugar
  • 1 egg, beaten
  • 0.25 pound cooked crabmeat
  • 3 green onions, chopped
  • 1 tablespoon chopped cilantro
  • 0.5 cucumber, sliced
  • 1 lime, sliced
Instructions:
  • In a saucepan, combine water and rice, then bring to a boil. Cover, reduce heat, and simmer for about 20 minutes until water is absorbed. Set aside.
  • In a wok over medium heat, sauté onions and garlic in oil until tender. Add cooked rice, salt, and sugar, and cook for 5 minutes until well combined. Stir in beaten egg until rice is coated. Increase heat to high, mix in crabmeat, green onions, and cilantro, and cook for 2-5 minutes until crab is heated through. Garnish with cucumber and lime slices before serving.
