Indulge in a delectable crab omelet with eggs, tomatoes, red bell peppers, and potatoes.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small potato, peeled and diced
  • 0.25 pound fresh crabmeat, drained and flaked
  • salt and pepper to taste
  • 1 small tomato, diced
  • 1 (1.5 ounce) box raisins
  • 0.25 cup peas
  • 1 red bell pepper, chopped
  • 3 eggs, beaten
Instructions:
  • In a skillet over medium heat, warm olive oil. Fry potato until tender, about 5 to 7 minutes. Remove potatoes with a slotted spoon to a plate lined with paper towels, leaving oil in the skillet.
  • Place the skillet back on medium heat. Sauté onion and garlic in oil until tender, approximately 5 minutes. Introduce crab to the skillet, season with salt and pepper, and mix well. Cover and let it cook for 2 minutes. Next, incorporate tomatoes into the mix and cook for an additional 2 minutes. Finally, add raisins, peas, and red bell pepper, stir, and cook for another 2 minutes.
  • Pour the beaten eggs evenly over the mixture in the skillet. Allow the eggs to cook until they are set, about 2 to 3 minutes. Carefully flip the omelet and cook for an additional minute. Transfer to a plate and serve hot alongside some delicious potatoes.
