Crabmeat in zesty lemon-yogurt dressing on red pepper squares, a delightful appetizer.
Ingredients:
  • 1 package (3 oz) cream cheese, softened
  • 1 container (6 oz) Greek Fat Free plain yogurt
  • 1/4 cup chopped fresh basil leaves
  • 2 tablespoons finely chopped green onion (2 medium)
  • 1 teaspoon grated lemon peel
  • 2 teaspoons lemon juice
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 cup frozen (thawed) chopped salad-style imitation crabmeat
  • 2 large red bell peppers
  • Small basil leaves or chopped fresh basil leaves, if desired
Instructions:
  • In a small bowl, use an electric mixer to blend creamy cream cheese with yogurt until smooth. Stir in chopped basil, green onions, lemon peel, lemon juice, ground red pepper, and crabmeat.
  • Cut each bell pepper into 15 (1 1/4-inch) squares, then top each piece with a rounded teaspoonful of crab mixture and garnish with basil leaves.
