Cranberry and orange relish

Delicious chunky fruit relish pairs perfectly with ham or roast turkey.
Ingredients:
  • 1 x 300g pkt frozen cranberries, thawed
  • 125ml (1/2 cup) orange juice
  • 100g (1/2 cup, firmly packed) brown sugar
  • 1 x 7cm cinnamon stick
  • 1 tsp finely grated orange rind
Instructions:
  • In a medium saucepan over low heat, melt together cranberries, orange juice, sugar, cinnamon stick, and orange rind. Stir constantly for 3 minutes until the sugar dissolves.
  • Turn up the heat to medium-high and bring the mixture to a boil. Lower the heat to medium and let it simmer for 6-8 minutes until it slightly thickens, stirring from time to time. Take it off the heat, remove the cinnamon stick, and let it cool for 15 minutes.
  • Put the relish in a serving dish and cover it directly with plastic wrap before chilling in the fridge for 1 1/2 hours.
