Irresistible twist on classic dessert favorites that will wow everyone.
Ingredients:
  • 250ml (1 cup) cranberry juice (Ocean Spray brand)
  • 9.00 gm powdered gelatine
  • 4 jam rollettes
  • 60ml (1/4 cup) cranberry juice, extra
  • 1 medium beurre bosc pear, peeled, cored, chopped
  • 1 x 200g container French vanilla fruche
  • 125ml (1/2 cup) vanilla-flavoured custard
  • 4 large strawberries, washed, hulled, chopped
Instructions:
  • In a saucepan, gently heat cranberry juice until simmering. Remove from heat and sprinkle gelatine on top. Stir until dissolved. Pour mixture into a container, cover with plastic wrap, and chill in the fridge until set, about 1 hour.
  • Slice each rollette into 6 pieces. Place 3 slices at the bottom of four 250ml (1-cup) serving glasses. Brush with half of the extra cranberry juice. Layer jelly and pear on top, then add the remaining rollette slices and brush with the rest of the juice. Finish with a dollop of fruche and a drizzle of custard.
  • Chill in the fridge for 3 hours, then serve topped with fresh strawberries.
