Versatile chutney enhances grilled and roasted meats.
Ingredients:
  • 1/2 pound cranberries
  • 2 ripe firm medium pears, chopped
  • 1 medium red bell pepper, chopped (1 cup)
  • 1 small onion, coarsely chopped (1/4 cup)
  • 1 garlic clove
  • 3/4 cup packed brown sugar
  • 1/2 cup raisins
  • 1/2 cup white vinegar
  • 1 1/2 teaspoons finely chopped gingerroot
Instructions:
  • Combine all ingredients in a 2-quart saucepan. Bring to a boil, stirring frequently, then reduce heat and simmer uncovered for about 1 hour, stirring often, until the mixture thickens and the fruit is tender.
  • Refrigerate in a sealed glass or plastic container for up to 2 weeks.
