Pear and cranberry chutney enhances roasted meats with a delightful blend of sweet and tart flavors.
Ingredients:
  • 3 medium firm ripe pears, peeled, cored and coarsely chopped (3 cups)
  • 1 cup dried or fresh cranberries
  • 3/4 cup sugar
  • 1/2 cup cider vinegar
  • 2 teaspoons finely chopped gingerroot
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
Instructions:
  • Combine all ingredients in a 2-quart saucepan. Bring to a boil, then lower the heat and simmer uncovered for about 1 hour, stirring regularly until thickened.
  • Chill for 1 hour, stirring occasionally. Serve the chutney at room temperature to savor its full flavor. Refrigerate, covered, for up to 2 weeks.
