Cranberry and White Chocolate Caramel Corn

Try this twist on snack mix: oven-baked caramel popcorn with cranberries and vanilla chips.
Ingredients:
  • 12 cups popped popcorn
  • 1 cup packed brown sugar
  • 1/2 cup butter or margarine
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups sweetened dried cranberries
  • 1 1/2 cups white vanilla baking chips
Instructions:
  • Preheat oven to 200°F. Spread popcorn evenly between two ungreased 13x9-inch pans.
  • In a sturdy 3-quart saucepan, warm up brown sugar, butter, corn syrup, and salt over medium heat until it starts bubbling at the edges. Stir occasionally. Let it cook for an additional 5 minutes, continuing to stir occasionally. Take it off the heat and mix in the baking soda.
  • Drizzle caramel mixture over popcorn and mix until fully coated. Mix in 1 cup cranberries and 3/4 cup baking chips in each pan until well combined. Bake for 1 hour, stirring every 15 minutes. Spread out on waxed paper or foil to cool, then store in an airtight container.
