Quick and easy white chocolate cranberry fudge made in the microwave. Perfect for Christmas gifts or a fast dessert. Just melt ingredients, set, and enjoy in minutes.
Ingredients:
  • 2 x 320g cans sweetened condensed coconut milk
  • 150g butter, chopped
  • 110g (1/2 cup) caster sugar
  • 55.60 gm glucose syrup
  • 4.40 gm vanilla extract
  • 0.60 gm salt
  • 180g white chocolate, finely chopped
  • 82.50 ml dried cranberries
Instructions:
  • Prepare a slice pan measuring 18 x 28cm by greasing it and lining the base and sides with baking paper, making sure to leave extra paper on the edges.
  • In a large microwave-safe bowl, combine condensed milk, butter, sugar, glucose syrup, vanilla, and salt. Microwave on High, stirring every 2 minutes, until the mixture thickens slightly, about 14 minutes.
  • Gently fold in the chocolate and cranberries into the fudge mixture until silky. Promptly transfer the mixture into the pan and level the top using a spoon. Let it rest at room temperature for 30 minutes, then refrigerate for 4 hours to firm up. Slice into pieces as desired.
