Impress with simple yet decadent white chocolate rocky road - perfect as a festive food gift.
Ingredients:
  • 250g packet marshmallows, halved
  • 100g packet dried cranberries
  • 110g packet macadamia nuts, roughly chopped
  • 60g Pistachios (optional)
  • 35g desiccated coconut
  • 2 x 180g blocks good-quality white chocolate, chopped
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper, ensuring a 2cm overhang on all sides.
  • In a bowl, mix marshmallows, cranberries, nuts, and coconut. Place chocolate in a microwave-safe bowl. Microwave on medium-high for 1-2 minutes, stirring every 30 seconds with a metal spoon until smooth.
  • Drizzle chocolate over marshmallow mixture and mix thoroughly. Transfer mixture to prepared pan, firmly pressing it down with a spatula. Chill for 2 hours or until firm. Slice into squares using a warm knife and enjoy serving.
