White chocolate and macadamia cookies

Irresistible chocolate macadamia cookies that you won't be able to have just one of.
Ingredients:
  • 125g butter, softened
  • 165g (3/4 cup) brown sugar
  • 4.40 gm vanilla essence
  • 150g (1 cup) plain flour, sifted
  • 160g (1 cup) self-raising flour, sifted
  • 200g Baking White Chocolate, roughly chopped
  • 150g unsalted macadamia nuts, roughly chopped
Instructions:
  • Prepare a baking tray by lining it with non-stick baking paper and then preheat the oven to 175°C.
  • In a large bowl, use an electric beater to whip together the butter and brown sugar until thick and creamy. Incorporate the egg and vanilla essence, and beat until thoroughly mixed.
  • Gently mix the plain flour and self-raising flour until just combined, then incorporate the white chocolate and macadamias to create a chunky mixture.
  • Scoop cookie dough onto the baking tray and lightly flatten. Bake for 15-20 minutes until golden. Let cool briefly on a tray, then transfer to a wire rack to cool completely.
