White chocolate and macadamia brownies

Decadent, non-traditional brownies bursting with rich chocolate flavor.
Ingredients:
  • Melted butter, to grease
  • 150g white chocolate, chopped
  • 150g unsalted butter
  • 3 eggs, lightly whisked
  • 150g (1 cup) plain flour
  • 60g (1/2 cup) whole milk powder
  • 60g (1/4 cup) caster sugar
  • 1.00 gm baking powder
  • 180g white chocolate, extra, chopped
  • 145g (1 cup) whole macadamia nuts
Instructions:
  • Preheat your oven to 180C. Grease a 20cm square cake pan by brushing it with melted butter, then line the base and sides with non-stick baking paper, ensuring some overhang on the sides.
  • In a small saucepan, gently melt the chocolate and butter over low heat until smooth and well combined. Let it cool slightly, then mix in the eggs until fully incorporated using a wooden spoon.
  • Sift flour, milk powder, sugar, and baking powder into a medium bowl. Mix in additional chopped chocolate and macadamia nuts. Incorporate the butter mixture until just combined.
  • Pour the batter into the pan and bake in a preheated oven for 50 minutes, or until a skewer inserted into the center comes out with moist crumbs clinging to it. Allow the cake to cool completely in the pan.
  • Slice into 16 perfectly sized squares.
