Cranberry Apple Pecan Quinoa Salad

Tantalizing quinoa salad with cranberries, apples, pecans, and a flavorful Dijon mustard dressing.
Ingredients:
  • 1.5 cups chicken broth
  • 1 cup quinoa, rinsed
  • 3 tablespoons olive oil
  • 1.5 tablespoons Dijon mustard
  • 1 teaspoon maple syrup, or more to taste
  • 0.25 teaspoon ground cinnamon
  • salt and ground black pepper to taste
  • 1 large crisp apple, chopped into small pieces
  • 1 cup pecan pieces
  • 0.5 cup dried cranberries
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Combine the chicken broth and quinoa in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for about 10 minutes until the broth is absorbed. Remove from heat and fluff with a fork.
  • Combine olive oil, Dijon mustard, maple syrup, cinnamon, salt, and pepper in a bowl, whisk until smooth. Drizzle over quinoa, stir. Add apple, pecans, cranberries, and Parmesan, stir. Cover and steam until warmed through and apples soften slightly, 5 to 10 minutes.
