Delicious turkey and cheese stuffed bread bites, coated in a crispy egg and cereal crust, served with tangy cranberry sauce - ideal party appetizers.
Ingredients:
  • 1/2 cup sour cream
  • 1/4 cup canned whole berry cranberry sauce
  • 8 slices whole-grain bread, crusts removed
  • 4 teaspoons mustard
  • 8 teaspoons canned whole berry cranberry sauce
  • 2 ounces thinly sliced cooked turkey
  • 2 ounces thinly sliced Swiss cheese
  • 3 cups cornflakes cereal, crushed
  • 2 eggs
  • 1/4 cup milk
  • 2 teaspoons sugar
  • 1/8 teaspoon salt
  • 1/4 cup margarine or butter, melted
Instructions:
  • Preheat oven to 425°F. Grease a 15 1/2x10 1/2x1 inch jelly roll pan with cooking spray. Combine sour cream and 1/4 cup cranberry sauce until fully mixed. Chill covered in the refrigerator until ready to serve.
  • Start by spreading 1 teaspoon of mustard on 4 bread slices each. Then, spread 2 teaspoons of cranberry sauce on the remaining bread slices. Place turkey and cheese on the mustard-spread slices. Finally, assemble the sandwiches by topping them with the cranberry-spread slices, cut each sandwich into fourths, and enjoy!
  • In a shallow bowl, add crushed cereal. In another shallow bowl, beat the eggs and mix in the milk, sugar, and salt until smooth. Dip each sandwich in the egg mixture, then coat with cereal. Place sandwiches in a pan and drizzle margarine over the top slices.
  • Bake for 12 to 15 minutes until golden and crunchy. Slice each sandwich diagonally and serve warm with sour cream-cranberry sauce.
