Cranberry Mousse

Vibrant crimson mousse: a tangy, refreshing dessert.
Ingredients:
  • 1 1/2 cups cranberry-raspberry juice
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup frozen cranberry-orange sauce (from 10-oz tub), thawed
  • 1 cup whipping (heavy) cream
Instructions:
  • Heat up a mix of cranberry-raspberry juice, sugar, and cornstarch in a small saucepan until it boils, stirring often. Let it cook for 1 minute, then add cranberry-orange sauce. Transfer the mixture to a bowl, cover it directly with plastic wrap, and chill in the fridge for about 2 hours.
  • In a chilled small bowl, use an electric mixer on high speed to whip the whipping cream until soft peaks form.
  • Whisk the chilled cranberry-raspberry mixture until smooth, then gently fold in the whipped cream. Divide the mixture into 6 dessert dishes and refrigerate for about 30 minutes until set.
