Cranberry oatmeal drop cookies drizzled with zesty orange icing.
Ingredients:
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup butter, softened
  • 0.75 cup packed brown sugar
  • 1 teaspoon orange zest
  • 1.5 cups quick cooking oats
  • 0.75 cup chopped cranberries
  • 0.25 cup chopped walnuts
  • 1 cup confectioners' sugar
  • 0.5 teaspoon orange zest
  • 2 tablespoons orange juice
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and grease your cookie sheets.
  • Combine the flour, baking powder, cinnamon, and nutmeg by sifting them together; set aside. Cream the butter and sugar in a medium bowl, then mix in the egg, milk, and orange zest. Add the dry ingredients and blend well. Finally, fold in the quick oats, cranberries, and nuts.
  • Place spoonfuls of dough on the cookie sheets, ensuring they are 2 inches apart. Bake in the preheated oven for 10 to 12 minutes until cookies are lightly browned. Transfer to wire racks to cool.
  • Combine confectioners' sugar, orange zest, and vanilla in a small bowl. Gradually mix in orange juice until desired consistency is achieved. Drizzle over cooled cookies.
