Cranberry Trifle Squares

Indulge in a delightful cranberry trifle with whipped cream, pound cake, sugar cookies, and almonds. Pure dessert bliss!
Ingredients:
  • 2 cups sugar
  • 1 1/2 cups water
  • 1 bag (12 ounces) fresh or frozen cranberries
  • 1/2 teaspoon almond extract
  • 2 cups whipping (heavy) cream
  • 1/4 cup sugar
  • 1 package (10.75 ounces) frozen pound cake loaf, thawed and cut into 10 slices
  • 1 cup crushed sugar cookies
  • 1/3 cup sliced almonds
Instructions:
  • In a 2-quart saucepan, combine 2 cups of sugar and water. Bring to a boil over high heat, stirring occasionally. Boil for 10 minutes. Add cranberries and reduce the heat to medium-high. Cook uncovered for 3 to 4 minutes until all the cranberries pop. Stir in almond extract and let it cool.
  • Whip chilled whipping cream and 1/4 cup of sugar with an electric mixer on high speed until stiff peaks form.
  • Place the cake slices in a rectangular baking dish, 11x7x1 1/2 inches, adjusting if needed to cover the bottom. Top with cranberry sauce, sugar cookies, whipped cream, and almonds.
  • Chill for a minimum of 2 hours before serving. Cut into squares and store covered in the refrigerator.
