Budget-friendly holiday twist: Turkey cranberry meatloaf.
Ingredients:
  • 1kg turkey mince
  • 1 egg, lightly beaten
  • 1 small brown onion, grated
  • 1 granny smith apple, grated
  • 2 garlic cloves, crushed
  • 62.50 ml shredded fresh sage leaves
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 187.50 ml dried breadcrumbs
  • 125.00 ml cranberry jelly, melted
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 14cm x 21cm loaf pan, and line it with baking paper, allowing a 5cm overhang on both long sides.
  • Mix the turkey, egg, onion, apple, garlic, sage, parsley, and breadcrumbs in a bowl using your hands. Press the mixture into the prepared pan.
  • 1. Spread 2 tablespoons of cranberry jelly on top. Bake for 1 hour, or until fully cooked. Let it rest in the pan for 5 minutes, then use the paper to easily lift it out. Transfer to a platter, brush with the rest of the jelly, and serve.
