Indulgent gooey Baked Brie with tangy cranberry sauce and sweet candied walnuts - the star of your holiday appetizer table.
Ingredients:
  • For the cranberry sauce
  • 12 ounces fresh cranberries
  • 1/2 cup dark brown sugar, tightly packed
  • 1/2 cup water
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • For the candied walnuts
  • 1 tablespoon unsalted butter
  • 1/4 cup sugar
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 cup walnut halves or pieces
  • For the baked brie
  • 1 (13.2-ounce) wheel of brie
  • 2 tablespoons shelled roasted pistachios, salted, roughly chopped
  • Crackers, sliced bread, or crostini, for serving
  • Garnish
  • 1 tablespoon chopped pistachios (optional)
Instructions:
  • Preheat your oven to 350ºF and line a sheet pan with parchment paper for the candied nuts later.
  • Cook the cranberry sauce: Combine cranberries, brown sugar, water, rosemary, and thyme in a saucepan over medium-high heat. Bring to a boil, then lower the heat and simmer for 15-20 minutes until cranberries burst and sauce thickens slightly. Stir every 5 minutes. Adjust sweetness with more brown sugar, if needed. Let the sauce cool as you make the candied nuts.
  • In a nonstick skillet over medium heat, melt butter and sugar. Stir to combine until sugar starts to dissolve. Add salt, cinnamon, and nutmeg, stirring well. Add walnuts and coat in the sugar mixture. Cook, stirring often, until sugar caramelizes and coats the nuts, about 3 to 4 minutes. Remove from heat if nuts smoke or char.
  • Once the walnuts are coated, spread them out on a prepared sheet pan to cool for 10 to 15 minutes until the candy coating hardens. Break apart any clumps once they are cool. For serving, chop half of the candied walnuts on a cutting board, and keep the remaining half in a small bowl as a side garnish.
  • Indulge in the irresistible creaminess of baked brie by placing it on a fresh sheet of parchment paper. Bake until the cheese is luxuriously soft and gooey at the center when gently pressed, around 20 minutes. (Adjust to 15 minutes for an 8-ounce wheel or 25 minutes for a 16-ounce wheel.)
  • Presentation time: Gently move the brie onto a platter using a spatula. Sprinkle 2 tablespoons of cranberry sauce, chopped candied walnuts, and pistachios over the top. Any leftover sauce and nuts can accompany it. Enjoy warm with crackers, bread, or crostini.
