Irresistible cranberry muffins that will wake up your senses and have everyone rushing to the table.
Ingredients:
  • 1 cup all-purpose flour
  • 3/4 cup cornmeal
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sweetened dried cranberries
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup coarsely chopped pecans
Instructions:
  • Preheat oven to 400°F and place paper baking cups in 12 regular-size muffin cups.
  • In a large bowl, combine flour, cornmeal, sugar, baking powder, and salt. In a separate small bowl, toss cranberries with 2 tablespoons of the flour mixture; set aside.
  • In a medium bowl, vigorously whisk together the egg until well combined. Stir in the milk and oil until smooth.
  • Create a crater in the middle of the dry ingredients. Pour in the egg mixture and mix until just combined (batter will be thin). Gently fold in cranberries and pecans. Evenly distribute batter into muffin cups.
  • Bake for 15 to 18 minutes until beautifully golden and a toothpick inserted in the center comes out clean. Let it cool for 1 minute, then gently transfer from pan to a cooling rack. Enjoy warm or at room temperature.
