Delicious blondies with cranberries, lemon, and white chocolate - a perfect blend of buttery, sweet, and tart flavors.
Ingredients:
  • nonstick cooking spray
  • 2 teaspoons baking powder
  • 1 cup unsalted butter, melted
  • 2 large eggs, beaten
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon, zested
  • 0.5 teaspoon almond extract
  • 0.5 teaspoon vanilla extract
  • 0.75 cup sweetened dried cranberries, divided
  • 0.5 cup white chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C), then line a 9x13-inch baking dish with parchment paper and coat it with nonstick cooking spray.
  • In a large bowl, blend flour, sugar, baking powder, and salt. In another bowl, mix butter, eggs, lemon juice, lemon zest, almond extract, and vanilla extract until fully combined. Combine wet ingredients with dry ingredients, stirring until well mixed. Fold in 1/2 cup each of cranberries and white chocolate chips.
  • Evenly distribute the batter in the prepared baking dish, then sprinkle the remaining 1/4 cup of cranberries on top.
  • Bake in the oven until the edges turn golden and the center is firm, for about 20-25 minutes.
  • Allow the blondies to cool on a wire rack until completely set before slicing and serving.
