Cranberry-Orange Relish

Delightful cranberry-orange relish perfect with pork, ham, or poultry.
Ingredients:
  • 1 cup sugar
  • 1 tablespoon finely chopped crystallized ginger, if desired
  • 1 bag (12 oz) fresh or frozen cranberries (3 cups)
  • 1 unpeeled orange
Instructions:
  • In a medium bowl, combine the sugar and ginger.
  • Prepare cranberries by washing and drying them, then removing any stems or blemished berries.
  • Prepare the orange by washing and drying it thoroughly. Cut the orange into 1-inch pieces, leaving the peel on, and make sure to remove any seeds.
  • Pulse half of the cranberries and orange pieces in a food processor until evenly chopped, about 15 seconds. Stir this mixture into the sugar mixture, then repeat with the remaining cranberries and orange pieces.
  • Refrigerate for a minimum of 24 hours to meld flavors, but do not exceed 1 week.
