Zesty cranberry-apple-orange relish - perfect for turkey or sandwiches. Requires no cooking.
Ingredients:
  • 2 cups rinsed raw cranberries
  • 2 peeled and cored tart green apples, cut into thick slices
  • 1 large, whole (peel ON) seedless orange, cut into sections
  • 1 to 2 cups granulated sugar (depending on how sweet you would like your relish to be)
Instructions:
  • Prepare your grinder: Use the medium-sized grinder plate if using an old fashioned grinder. Place the grinder on the edge of a table with a large bowl underneath to catch the fruit mix as it is ground. If using a KitchenAid mixer attachment or a food processor, be cautious not to over-pulse to avoid turning the mixture into mush. Alternatively, you can finely chop by hand, but it can be challenging, especially with cranberries.
  • Grind fruit mixture: Run cranberries, orange slices, apple slices, and orange peel through a grinder, alternating them for a varied blend. If grinder is not available, pulse the fruit in a food processor until fine.
  • Mix in the sugar gradually, starting with less than a cup and adding 1/4 cups at a time until your desired sweetness level is reached.
