Corn, tomatoes, onion, bell pepper, and crawfish tails unite in a flavorful Cajun side dish.
Ingredients:
  • 8 ears fresh corn, husked
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 pound frozen peeled crawfish tails, thawed
  • 3 green onions, sliced
  • 1.5 teaspoons white sugar
  • 2 teaspoons freshly ground black pepper
  • 0.25 teaspoon cayenne pepper
Instructions:
  • Cut corn kernels into a large bowl using a sharp knife. Then scrape the cobs with the dull side of the knife into the same bowl to release any remaining juice. Set aside.
  • In a large skillet over medium heat, melt butter until sizzling. Stir in onion, bell pepper, and tomatoes, cooking until onion is tender, approximately 10 minutes. Incorporate corn, crawfish, green onions, sugar, salt, black pepper, and cayenne, stirring until corn is tender, around 10 more minutes.
