Crazy simple fish pie

Ingredients:
  • 400 g undyed smoked haddock skin off, from sustainable sources
  • 2 bunches of spring onions
  • 250 g baby spinach
  • 150 g Cheddar cheese
  • 4 sheets of filo pastry
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Place the fish in a bowl and cover with boiling water from a kettle. Let it soak. Meanwhile, trim and roughly chop the spring onions. Heat 1 tablespoon of olive oil in a 30cm non-stick ovenproof frying pan over high heat. Add the spring onions and stir-fry for 2 minutes. Layer the spinach on top, cook until wilted, then turn off the heat. Pour 100ml of the soaking water over the spinach. Drain the fish, break into pieces, and arrange evenly in the pan. Grate most of the cheese over the fish and season with black pepper. Layer the filo on top, tucking it around the fish and up the sides of the pan. Tear the last sheet and place on top. Sprinkle the remaining cheese, drizzle with ½ tablespoon of olive oil, and bake for 15 to 17 minutes until golden and crisp. Enjoy this delicious dish!
