Cream cheese cake with orange frosting

Elevate your entertaining with a simple baked cheesecake topped with zesty orange frosting.
Ingredients:
  • Melted butter, to grease
  • 1 x 250g pkt cream cheese, at room temperature
  • 150g (2/3 cup) caster sugar
  • 8.80 gm vanilla essence
  • 2 eggs
  • 225g (1 1/2 cups) self-raising flour, sifted
  • 185mls (3/4 cup) buttermilk
  • 225g (1 1/2 cups) icing sugar mixture, sifted
  • 1/2 orange, rind finely grated
Instructions:
  • Preheat your oven to 170°C, then generously grease a 9 x 19cm loaf pan with melted butter.
  • In a medium mixing bowl, use electric beaters to whip together 125g of cream cheese, sugar, and vanilla essence until light and creamy. Add the eggs one at a time, beating well after each addition until fully combined.
  • Combine half of the flour and half of the buttermilk using a wooden spoon until mixed. Then, incorporate the remaining flour and buttermilk until well combined.
  • Grease a pan, pour in the batter, and bake in a preheated oven for 35-40 minutes or until a skewer comes out clean when inserted in the center. Let it rest for 5 minutes, then transfer to a wire rack to cool.
  • Use electric beaters to blend together the remaining cream cheese with half of the icing sugar until fully combined. Mix in the rest of the icing sugar and beat for 3-4 minutes until the mixture turns pale, light, and fluffy. Incorporate the orange rind and mix well. Chill in the fridge until needed.
  • Spread the luscious frosting generously on the cooled cake before slicing into delectable portions.
