Sweet Potato Sheet Cake

Transform classic yellow cake into a flavorful autumn dessert with a touch of orange, topped with decadent cream cheese frosting.
Ingredients:
  • 1 medium orange
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 2 teaspoons pumpkin pie spice
  • 1 cup mashed cooked sweet potato
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup butter, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon orange extract
  • Reserved grated orange peel
Instructions:
  • Preheat the oven to 350°F and generously spray the bottom of a 15x10x1-inch pan with cooking spray.
  • Grate the peel from the orange to yield around 1 1/2 tablespoons and reserve it for the icing. Then, extract 1/3 to 1/2 cup of juice from the orange and pour it into a large bowl.
  • In a bowl, combine the remaining Cake ingredients with the orange juice. Mix with an electric mixer on low speed for 30 seconds, then increase to medium speed for 2 minutes, occasionally scraping the sides of the bowl. Pour the batter into the pan.
  • Bake for 18 to 22 minutes until a toothpick inserted in the center comes out clean. Allow to cool completely on a cooling rack for at least 1 hour.
  • In a medium bowl, whisk together the Icing ingredients until silky smooth. Generously spread over the cake and chill in the refrigerator to set.
