Fall-inspired sweet potato cake serves 15 with rich flavors of cinnamon, nutmeg, and maple.
Ingredients:
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 1/2 cups mashed cooked dark-orange sweet potatoes (2 medium)
  • 1/2 cup butter, softened
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 2 eggs
  • 4 cups powdered sugar
  • 2 teaspoons maple flavor
  • 3 to 4 tablespoons milk
Instructions:
  • Preheat the oven to 350°F. Grease the bottom and sides of a 13x9-inch pan with shortening or cooking spray, then lightly flour. In a large bowl, use an electric mixer on low speed to blend all cake ingredients, scraping the bowl occasionally, until well combined. Increase the speed to high and beat for 3 minutes, remembering to scrape the bowl occasionally. Pour the batter into the prepared pan.
  • Bake for 35-40 minutes until golden brown, and a toothpick inserted in the center comes out clean. Allow to cool completely in the pan on a cooling rack for about 1 hour.
  • In a medium bowl, whisk frosting ingredients together, gradually adding milk until frosting reaches a smooth and spreadable consistency. Frost the cake.
