Irresistible sweet potato dump cake with buttery, sweet layers and a crunchy topping - a guaranteed hit at any fall gathering!
Ingredients:
  • 2  15 ounce) cans sweet potatoes in light syrup, drained
  • 1/2 cup salted butter, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 1 tablespoon vanilla
  • 1 tablespoon pumpkin pie spice
  • 1 box (2 layer) spice cake mix or yellow cake mix
  • 1/2 cup salted butter, cold, cut into small pieces
  • 1/2 cup chopped pecans (optional)
  • Whipped cream or vanilla ice cream, to serve, if desired
Instructions:
  • Begin by collecting all the required ingredients. Preheat the oven to 350 degrees F (180 degrees C) and then generously grease a 9x13-inch baking pan.
  • In a large bowl, mix together drained sweet potatoes, 1/2 cup melted butter, sweetened condensed milk, vanilla, and pumpkin pie spice until almost smooth using an electric mixer. Some small sweet potato chunks may remain.
  • Evenly distribute the sweet potato mixture in the prepared pan. Sprinkle cake mix on top, then add cold butter pieces evenly over the cake mix. Optionally, top with pecans.
  • Bake for 45 minutes, until golden brown and set. Allow to cool in the pan for at least 20 minutes before serving. Enjoy with whipped cream or ice cream, if desired.
