Decadent sweet potato layer cake with orange-allspice buttercream.
Ingredients:
  • 0.25 cup shortening
  • 0.25 cup vegetable oil
  • 0.25 cup all-purpose flour
  • 2 cups white sugar
  • 5 eggs
  • 1 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 2 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 0.5 teaspoon salt
  • 3 cups mashed sweet potatoes
  • 1 cup chopped pecans
  • 4 cups sifted confectioners' sugar
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup butter, softened
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon grated orange zest
  • 0.5 teaspoon ground allspice
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Mix shortening, vegetable oil, and flour thoroughly in a bowl. Use the mixture to generously coat two 9x9-inch cake pans. Save any excess mixture for your next baking adventure.
  • Combine sugar, eggs, oil, and vanilla extract in a large bowl and beat until well mixed.
  • In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin spice, and salt. Gradually add this mixture to the sugar mixture while mixing continuously to avoid lumps. Gently incorporate sweet potatoes and chopped pecans. Divide the batter evenly among the prepared pans.
  • Bake in the preheated oven for 40 to 45 minutes or until a toothpick comes out clean. Allow cakes to cool in the pans for 15 minutes, then transfer to a wire rack to cool completely for about 1 hour.
  • Prepare the frosting: In a medium bowl, mix confectioners' sugar, cream cheese, butter, vanilla extract, orange zest, and allspice until smooth and creamy while the cakes cool.
  • Place the cooled cake layer on a serving plate and generously cover it with frosting. Add the second cake layer on top and frost the entire cake, making sure to cover the top and sides. Finish by sprinkling pecans on top for added crunch and flavor.
