Delicate sweet potato bread filled with spiced raisins and pecans.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cinnamon
  • 2 eggs, beaten
  • 0.5 cup vegetable oil
  • 2 tablespoons milk
  • 1 cup cooked and mashed sweet potatoes
  • 1 cup chopped pecans
  • 0.5 cup golden raisins
Instructions:
  • First, preheat your oven to a toasty 325 degrees F (165 degrees C). Then, generously grease an 8x4 inch loaf pan.
  • Combine flour, baking powder, salt, nutmeg, cinnamon, and sugar in a medium bowl. Mix in eggs, oil, and milk until well combined. Fold in mashed sweet potatoes, pecans, and golden raisins. Transfer batter to the prepared pan.
  • Bake the bread for 70 minutes, or until a toothpick inserted comes out clean. Let it cool in the pan for at least 15 minutes before removing. For optimal flavor, store overnight before serving.
