Delicious sweet potato bread with pecans, spiced with cinnamon and nutmeg for a moist and flavorful loaf reminiscent of pumpkin bread.
Ingredients:
  • 1.5 cups white sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1.75 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.33333331346512 cup water
  • 1 cup cooked and mashed sweet potatoes
  • 0.5 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large bowl, mix sugar and oil until well combined. Add eggs and beat until smooth. In another bowl, combine flour, baking soda, cinnamon, nutmeg, and salt. Gradually stir the flour mixture into the egg mixture along with water. Fold in sweet potatoes and chopped nuts. Pour the batter into the loaf pan and bake.
  • Bake in the preheated oven for about an hour or until a toothpick inserted into the center comes out clean.
