Transform holiday sweet potatoes into a delicious, spiced quick bread with crunchy pecans for a delightful breakfast or snack.
Ingredients:
  • 1 cup butter, softened
  • 0.66666668653488 cup white sugar
  • 0.66666668653488 cup packed brown sugar
  • 2 cups mashed sweet potatoes
  • 1 (14 ounce) can sweetened condensed milk
  • 4 eggs, beaten
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 2 cups baking mix (such as Bisquick ®)
  • 2 tablespoons baking mix (such as Bisquick ®)
  • 1 cup chopped pecans
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease and flour two 9x5-inch loaf pans.
  • Cream together butter, white sugar, and brown sugar until smooth. Fold in sweet potatoes, sweetened condensed milk, eggs, cinnamon, nutmeg, ginger, and cloves until fully incorporated.
  • In a large bowl, combine all the baking mix with the sweet potato mixture until just blended. Gently fold in the pecans, then evenly divide the batter between the two loaf pans.
  • Bake in the preheated oven for 60 to 70 minutes until a knife inserted in the center of the loaves comes out clean. Let the loaves cool in the pans for 5 minutes before transferring them to a wire rack to cool completely for at least 2 hours.
