Biscuit bread pudding with orange sauce - a modern twist on a classic favorite.
Ingredients:
  • 4 1/2 cups Original Bisquick™ mix
  • 1 1/3 cups milk
  • 1 cup chopped pecans
  • 1/2 cup raisins
  • 2 1/2 cups milk
  • 2 1/2 cups half-and-half
  • 1 1/4 cups mashed baked sweet potatoes
  • 1 cup granulated sugar
  • 1/4 cup butter or margarine, melted
  • 1 tablespoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 eggs
  • 2 cups powdered sugar
  • 1 cup butter or margarine, softened
  • 1/2 cup orange juice
  • 2 teaspoons cornstarch
  • 4 egg yolks, beaten
Instructions:
  • Preheat the oven to 450°F. Combine Bisquick mix and 1 1/3 cups of milk in a large bowl until a soft dough forms. Spoon dough onto an ungreased cookie sheet. Bake for 8 to 10 minutes or until golden brown. Serve by breaking up the biscuits.
  • Grease a 13x9x2-inch rectangular pan with butter. Place biscuit pieces in the pan and sprinkle with pecans and raisins. In a large bowl, use an electric mixer on low speed to combine all remaining Pudding ingredients until blended. Pour the mixture over the biscuits in the pan. Cover and refrigerate for at least 2 hours, but no longer than 8 hours.
  • Preheat the oven to 350°F. Give the mixture in the pan a gentle stir. Bake for around 1 hour, or until the top is golden and a toothpick inserted in the center comes out clean.
  • In a 2-quart saucepan, gently warm all Orange Sauce ingredients on low heat for 5 to 10 minutes. Stir constantly with a wire whisk until the sauce slightly thickens and reaches 165°F for 15 seconds. Serve the warm sauce over pudding and store any leftovers covered in the refrigerator.
