Sweet potato cinnamon quick bread - a delightful treat with a hint of brown sugar.
Ingredients:
  • 1 large sweet potato, cut into chunks
  • 1 cup brown sugar
  • 1 cup butter
  • 0.33333334326744 cup sweetened condensed milk
  • 1 teaspoon ground cinnamon
Instructions:
  • - Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a casserole dish with luscious butter or oil.
  • In a large pot, submerge sweet potato chunks in salted water. Boil, then simmer covered over medium-low heat until tender for about 20 minutes. Drain and transfer to a large bowl.
  • Use a potato masher to mash the potatoes until smooth. Add brown sugar, butter, condensed milk, vanilla extract, cinnamon, and salt to the mashed potatoes, then whisk until fluffy. Crack eggs into the bowl and whisk until the mixture lightens; pour into the prepared dish.
  • Bake until beautifully golden brown, for around 90 minutes in the preheated oven.
