Southern Sweet Potato Bread

Indulge in this rich, butter-free quick bread that's moist and flavorful. Ready in just 15 minutes!
Ingredients:
  • 1 1/2 cups Gold Medal™ self-rising flour
  • 1 cup sugar
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 2 tablespoons milk
  • 2 eggs, slightly beaten
  • 1 cup mashed cooked sweet potatoes
  • 1 cup chopped pecans
  • 1/2 cup golden raisins
Instructions:
  • Preheat the oven to 350°F. Grease the bottom of an 8x4-inch loaf pan with shortening or cooking spray. In a large bowl, combine flour, sugar, nutmeg, and cinnamon.
  • Combine oil, milk, and eggs in a blender until smooth. Fold in sweet potatoes, pecans, and raisins until evenly combined. Transfer mixture into a pan.
  • Bake for 1 hour 15 minutes, or until a toothpick comes out clean when inserted in the center. Let it cool in the pan for 15 minutes, then transfer to a cooling rack. Allow it to cool completely for about 1 hour. Wrap tightly and store at room temperature for up to 4 days, or refrigerate for up to 10 days.
