Quick and Easy Sweet Potato Pound Cake

Shortcut to delicious Southern-style sweet potato pound cake using a mix.
Ingredients:
  • 1 box (16 oz) Betty Crocker™ Pound Cake Mix
  • 1 cup mashed cooked sweet potatoes
  • 1/2 cup milk
  • 1 teaspoon ground nutmeg
  • 3 eggs
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
Instructions:
  • Preheat oven to 350°F. Grease a 10-inch angel food (tube) cake pan with shortening and dust lightly with flour.
  • In a spacious bowl, use an electric mixer on low speed to beat together the cake mix, sweet potatoes, milk, nutmeg, and eggs for 1 minute. Increase speed to medium and beat for an additional 3 minutes, remember to scrape the bowl occasionally. Spread the mixture evenly in the pan.
  • Bake for 45 to 50 minutes until a toothpick inserted in the center comes out clean and the cake is golden brown. Let it cool for 10 minutes, then transfer it from the pan to a wire rack. Allow it to cool completely for about 1 hour before frosting the cake.
