Wholesome sweet potato soup infused with warm spices and cooked in flavorful chicken broth.
Ingredients:
  • 3 large sweet potatoes, peeled and cut into small pieces
  • 6 cups chicken broth
  • 1 tablespoon orange-flavored liqueur (such as Cointreau®)
  • 0.5 cup fat-free half-and-half
  • 0.75 teaspoon ground nutmeg
  • 0.5 teaspoon freshly grated ginger
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon cayenne pepper
  • 0.25 cup chopped pecans
Instructions:
  • In a large pot, combine sweet potatoes and chicken broth. Bring to a boil, stir in orange liqueur, and simmer until sweet potatoes are tender, about 25 minutes.
  • Blend the sweet potatoes with the broth using an immersion blender until silky.
  • Blend the half-and-half with nutmeg, ginger, cinnamon, and cayenne pepper in with the pureed sweet potatoes, then season generously with salt and pepper.
  • Toast fragrant pecans in a hot skillet over medium-high heat.
  • Pour the soup into bowls and top with toasted pecans for added crunch and flavor.
