Sweet potato pound cake in a Bundt pan with citrus glaze, ideal for festive gatherings.
Ingredients:
  • 2 cups white sugar
  • 1 cup butter, softened
  • 2 cups cooked and mashed sweet potatoes
  • 4 large eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 1 cup sifted confectioners' sugar
  • 5 teaspoons orange juice
  • 2 tablespoons grated orange zest
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 10-inch tube or Bundt pan.
  • In a large bowl, use an electric mixer on medium speed to cream together sugar and butter until light and fluffy. Add mashed sweet potatoes and vanilla, mix until well blended. Then add eggs one at a time, ensuring each is well mixed before adding the next. In a separate bowl, sift together flour, baking powder, cinnamon, baking soda, nutmeg, and salt. Add this mixture to the potato mixture on low speed until combined. Pour the batter into the prepared pan.
  • Bake the cake in the preheated oven for 1 hour and 20 minutes or until a toothpick inserted comes out clean. Allow the cake to cool in the pan for 20 minutes, then gently invert onto a serving plate.
  • Prepare a luscious glaze by combining confectioners' sugar and 3 to 5 teaspoons of fresh orange juice in a small bowl until it reaches a smooth drizzling consistency.
  • Drizzle glaze over the warm cake and garnish with orange zest.
