Holiday Left-Over Sweet Potato Cake

Leftover sweet potato cake - moist and no icing needed. Perfect for using up Thanksgiving leftovers. Adjust sugar to taste, great for Christmas.
Ingredients:
  • 1.75 cups white sugar
  • 0.75 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups cooked, mashed sweet potatoes
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 0.5 cup beer
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease and flour a 9x13-inch baking dish.
  • In a large bowl, mix sugar and vegetable oil until smooth. Add eggs one at a time, then mix in vanilla and sweet potatoes. In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Gradually stir into the batter, alternating with beer until just combined. Spread the batter evenly in the pan.
  • Bake in the preheated oven for 35 minutes, or until a knife inserted into the center comes out clean. Allow to cool completely before frosting or serving.
