Ingredients:
  • 36.80 gm vegetable oil
  • 1 garlic clove, finely chopped
  • 400g canned chickpeas, rinsed, drained
  • 1 tsp ground coriander
  • 40.00 ml chopped coriander leaves
  • 1 egg yolk
  • 75g plain flour
  • Lebanese bread, to serve
  • Lettuce, to serve
  • 1 tomato, sliced, to serve
  • 1 cucumber, sliced, to serve
  • Natural yoghurt, optional, to serve
  • Sweet chilli sauce, optional, to serve
Instructions:
  • In a pan over medium heat, warm up 1 tablespoon of oil. Sauté onion and garlic, stirring occasionally, for 2-3 minutes until they start to soften. Transfer the mixture to a food processor and blend into a smooth paste with chickpeas, spices, coriander, egg yolk, salt, and pepper.
  • Shape the mixture into twelve 5cm-diameter patties using floured hands. Dust each patty in flour and place on a plate. Refrigerate for 30 minutes.
  • In a non-stick frypan over medium-high heat, fry felafel in 1 tablespoon of oil until golden on each side for 1-2 minutes. Let them cool down. Fill each wrap with 3 felafel, salad, yoghurt, and optional chilli sauce.
