Whip up crispy chickpea falafel in the waffle maker, top with creamy labneh and fresh salad for a delicious meal.
Ingredients:
  • 400g can chickpeas, rinsed, drained
  • 2.00 gm baking powder
  • 62.50 ml chopped parsley, plus extra leaves, to serve
  • 2 garlic cloves, chopped
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 1.20 gm sea salt flakes
  • Labneh, to serve
  • Cherry tomatoes, sliced
  • Radish, thinly sliced
  • Fresh mint leaves, to serve
  • Lemon thyme sprigs, to serve
  • Sliced chilli, to serve
  • Olive oil, to drizzle
Instructions:
  • Combine chickpeas, flour, baking powder, parsley, garlic, ground coriander, cumin, salt, and 125ml (1/2 cup) water in a food processor, and blend until smooth.
  • Heat up the waffle maker on medium heat and lightly grease it. Pour one-third of the batter onto the maker, close the lid, and cook for about 7 minutes until it becomes crispy and golden brown. Repeat this process two more times to make a total of 3 waffles.
  • To serve, layer waffles with creamy labneh, fresh tomato slices, crunchy radish, fragrant mint and lemon thyme leaves, spicy chili, and extra parsley. Finish with a generous drizzle of olive oil and season to taste.
