Try this fun twist on classic falafel by cooking it in a waffle iron for a delicious and unique dish that's perfect for topping with your favorite ingredients.
Ingredients:
  • cooking spray
  • 2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
  • 1 medium onion, chopped
  • 2 large egg whites
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup chopped fresh parsley
  • 3 cloves roasted garlic, or more to taste
  • 1.5 tablespoons all-purpose flour
  • 2 teaspoons ground cumin
  • 1.75 teaspoons salt
  • 1 teaspoon ground coriander
  • 0.25 teaspoon cayenne pepper
  • 1 pinch ground cardamom
Instructions:
  • Preheat the waffle iron following the manufacturer's guidance and lightly coat the inside with cooking spray.
  • Combine garbanzo beans in a food processor until roughly chopped. Add onion, egg whites, cilantro, parsley, garlic, flour, cumin, salt, coriander, black pepper, cayenne pepper, and cardamom. Pulse, scrape the sides as needed until the mixture resembles a coarse meal. Transfer to a bowl and stir with a fork.
  • Place generous 1/4 cup portions of falafel batter onto the heated waffle iron. Cook until beautifully golden, approximately 5 minutes. Repeat this process with the remaining batter.
