Indulgent layered cake with creamy vanilla cream cheese frosting, accented with tangy mandarin oranges and pineapple.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix
  • 8 ounces cream cheese
  • 1.5 cups confectioners' sugar
  • 1 (20 ounce) can crushed pineapple with juice
  • 2 (8 ounce) cans mandarin oranges, drained
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 1 (8 ounce) container frozen whipped topping, thawed
Instructions:
  • Prepare and bake the cake mix according to the package instructions for two 9-inch round layers. Allow the layers to cool, then cut each layer in half to create 4 layers.
  • In a large bowl, whip cream cheese until soft, then gradually mix in confectioners' sugar. Stir in pineapple with juice and drained mandarin oranges (reserve 5 slices for decoration). Mix in dry pudding mix, then fold in whipped topping.
  • Start by elegantly arranging one cake layer, cut side up, on a beautiful cake plate. Generously spread with luscious frosting. Gently place the next layer, cut-side down, on top of the first layer, then add more delightful frosting. Continue this process until all layers are stacked, finishing off with a final layer of frosting on top and around the sides of the cake. Decorate the masterpiece with the reserved mandarin orange slices. For enhanced flavors and textures, refrigerate overnight before serving. Enjoy!
