Creamy chicken and spinach casserole with mozzarella - a comforting crowd-pleaser!
Ingredients:
  • cooking spray
  • 1 tablespoon olive oil, or as needed
  • 2 cups chopped onions
  • salt and ground black pepper to taste
  • 1.5 pounds cooked chicken breast, shredded
  • 2 (9 ounce) packages fresh spinach, chopped
  • 2 (8 ounce) tubs whipped cream cheese
  • 3 cups shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously spray a medium or large casserole dish with cooking spray.
  • In a large skillet, heat oil over medium-high heat. Saute onions with a generous pinch of salt and pepper until translucent, about 5 minutes. Transfer to a large mixing bowl.
  • Combine cooked chicken with onions. Gradually stir in spinach and cream cheese until fully mixed. Incorporate half of the mozzarella cheese until creamy and smooth. Pour mixture into casserole dish and top with remaining mozzarella cheese before baking.
  • Place in the oven and bake until the cheese has melted and the filling is bubbling, approximately 30 minutes. Allow to cool for 10 minutes before serving.
