Cream of Mushroom Soup

Quick and cozy cream of mushroom soup in 30 minutes!
Ingredients:
  • 1 lb fresh mushrooms
  • 1/4 cup butter or margarine
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup whipping (heavy) cream
  • 1 can (14 oz) chicken broth
  • 1 tablespoon dry sherry, if desired
  • Freshly ground pepper
Instructions:
  • Slice enough mushrooms to yield 1 cup, then chop the rest.
  • In a 3-quart saucepan, melt butter over medium heat until sizzling. Sauté sliced and chopped mushrooms in the fragrant butter for about 10 minutes, stirring occasionally, until they turn a beautiful golden brown. Sprinkle in flour and salt, and stir continuously until the mixture thickens to perfection.
  • Gently mix in whipping cream and broth until heated through, then stir in sherry. Finish by sprinkling with pepper for a perfect touch of flavor.
