Indulge in a rich and flavorful cream of mushroom soup using your favorite mushrooms like button, shiitake, cremini, or wild varieties for an exquisite twist.
Ingredients:
  • 5 cups sliced fresh mushrooms
  • 1.5 cups chicken broth
  • 0.5 cup chopped onion
  • 0.125 teaspoon dried thyme
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 cup half-and-half
  • 1 tablespoon sherry
Instructions:
  • Prepare all your ingredients.
  • In a heavy saucepan, gently cook mushrooms, broth, onion, and thyme until vegetables are tender, about 10-15 minutes.
  • Safely pour the hot mixture into a blender or food processor. Secure the lid and use a potholder to hold it down, then pulse until creamy with some vegetable chunks remaining.
  • In the same saucepan, melt the butter. Whisk in the flour until smooth, followed by the salt and pepper. Gradually whisk in the half-and-half and mushroom mixture.
  • Bring the soup to a boil, stirring constantly until it thickens.
  • Mix in the sherry. Adjust seasoning with additional salt and pepper to taste.
