Creamy corn with tomatoes and herbs - an easy and delicious side dish.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 3 cups fresh corn kernels, cut from the cob
  • 2 ounces cream cheese
  • 2 tablespoons water
  • 2 medium tomatoes, chopped
  • 0.5 tablespoon chopped fresh parsley
  • 0.5 tablespoon chopped fresh basil
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground black pepper
Instructions:
  • - In a large skillet over medium heat, sauté onions until soft, about 3 minutes. - Add corn kernels and cook until tender, about 5 minutes. - Melt cream cheese with water in the skillet. - Stir in tomatoes, parsley, and basil. - Season with salt and black pepper to taste before serving.
