Creaming soda jelly cheesecake recipe

Retro no-bake cheesecake with condensed milk, creaming soda, and pink jelly cubes for a fun, fizzy flavor resembling a beautiful Terrazzo tile.
Ingredients:
  • 500ml (2 cups) creaming soda soft drink
  • 40.00 gm boiling water, plus 60ml (1/4 cup), extra
  • 9.00 gm gelatine powder, plus 9.00 gm, extra
  • 250g packet nice biscuits
  • 120g butter, melted
  • 500g cream cheese, at room temperature, chopped
  • 395g can sweetened condensed milk
  • Pink food colouring, to tint
  • 300ml carton thickened cream, whipped
  • Pink sugar crystals, to decorate
Instructions:
  • In a saucepan, simmer creaming soda over medium-high heat. Dissolve gelatine in boiling water, then mix into the soda. Transfer the mixture to a plastic container and refrigerate for 4 hours or overnight to set.
  • Prepare a 20cm round springform pan by greasing the base and sides and lining them with baking paper. Crush the biscuits in a food processor until finely crushed. Add butter and process until combined. Transfer the mixture to the pan and use a straight-sided glass to firmly press it over the base and up the sides. Chill in the fridge for 30 minutes.
  • Combine cream cheese and condensed milk in a clean food processor, blending until smooth. Add food colouring to achieve a pink hue and blend until evenly colored. In a separate heatproof bowl, dissolve extra gelatine in boiling water. Incorporate the gelatine mixture into the cream cheese blend and process until fully combined.
  • Transfer the jelly to a pristine work surface. Cut into 2cm cubes. Place half of the jelly cubes on the biscuit base. Pour half of the cream cheese mixture over the jelly cubes. Add the rest of the jelly cubes and pour the remaining cream cheese mixture over them. Refrigerate for 6 hours to set.
  • Transfer the luscious whipped cream into a piping bag equipped with a large plain nozzle. Puff delightful peaks of cream over the cheesecake, then scatter with sparkling sugar crystals for an elegant finishing touch.
